Swann Campaign Needs an Omelet Recipe

How much egg do you need on your face before you awaken and realize you either need to shape up or find a good omelet recipe? Lynn Swann's gubernatorial campaign has embarrassed itself once again by insisting Ed Rendell provide information they've already supplied. This newest flameout about gambling reforms provided Ed's spokesman with some nice material. Since the Governor's staff says they sent a letter with their proposals to Republican legislators and leaders they have offered to read it aloud if they're so illiterate as being unable to do so themselves.

Bingo.

On top of this fiasco a little bird told me about an event this week where a Swann surrogate came waltzing in very late and very arrogantly strolled to the front of the room munching on cookies he leisurely consumed as if he'd been on schedule and had all the time in the world.

In order to provide a tangible service and in the spirit of bipartisanship
I offer a recipe, courtesy of Cooking Light:

2 tablespoons chopped fresh cilantro1/4
teaspoon salt4 large egg whites1 large egg1/2
cup canned black beans, rinsed and drained1/4 cup chopped green
onions1/4 cup (1 ounce) reduced-fat shredded cheddar cheese1/4
cup bottled salsaCooking sprayCombine first 4 ingredients in a medium bowl,
stirring with a whisk. Combine beans, onions, cheese, and salsa in a medium
bowl.
Heat a medium nonstick skillet coated with cooking spray over medium
heat. Pour egg mixture into pan; let egg mixture set slightly. Tilt pan and
carefully lift edges of omelet with a spatula; allow uncooked portion to flow
underneath cooked portion. Cook 3 minutes; flip omelet. Spoon bean mixture onto
half of omelet. Carefully loosen omelet with a spatula; fold in half. Cook 1
minute or until cheese melts. Slide omelet onto a plate; cut in half.
